Kaiseki
The Art of Seasonal Elegance.
A quiet dialogue between nature and craft, unfolding course by course.
An experience shaped by time, restraint, and intention.

Just moments from the Kabuki Theatre in Ginza, this intimate restaurant offers a quietly distinctive world where cuisine and culture converge. With understated playfulness, dishes are subtly attuned to the theatre’s current performances. Signature highlights include “unagi jibiyaki”—eel grilled directly over charcoal without steaming, known for its rich, smoky depth—and freshly hand-cut soba. Edo-period antique tableware lends each course a sense of history and refined elegance.
Guided by the rhythms of the seasons and the sea, Chef Fujinai selects the finest ingredients of the day, shaping each dish to reflect a fleeting moment in nature. At the heart of his craft lies a deep respect for seasonality and a trust shared with each guest, leaving a gentle, lingering impression.
More than a meal, it is an immersive experience of authentic Japanese cuisine and culture, engaging all five senses and welcoming guests of all ages.

The chef, a certified sommelier, brings a refined sensibility to both sake and the pairing of Japanese cuisine with wine. Guided by this philosophy, he transforms seasonal ingredients into imaginative, one-of-a-kind dishes. His warm, engaging presence naturally draws guests together around the open kitchen counter, creating a sense of unity where each course invites new discoveries and deeper appreciation.
Among the highlights are the 100% buckwheat soba, freshly milled on a custom stone mill, and a curated selection of Kirinzan sake, sourced through a close relationship with the brewery. It is a culinary experience found only here.
