The Beginning
My journey began at seventeen, when I first stepped into the world of sushi. The defining turning point came at twenty-five, with my encounter with Hiroaki Kato of Miyakozushi.
There, I inherited the very essence of Edomae sushi—once cherished by Japan’s cultural elite and business luminaries—and, by observing my master’s every movement, came to understand the true aesthetics that underpin this craft.
The Chef’s Journey
At Sushi Isshin, a celebrated establishment in Tokyo’s Yushima district, he served as head chef for 25 years before setting out independently at the age of fifty.
To open a restaurant under one’s own name is to embrace a relentless pursuit with no room for compromise—a continuous test of both craft and conviction.
Philosophy of Taste
Reading the season, preserving with ice, and allowing umami to bloom—this is the foundation of my craft.
The quality of sushi is determined the moment I step into the market. Each fish reveals a different character from day to day, shaped by nature’s subtle rhythms. That is why I do not set a menu; instead, I serve omakase, selecting only what I believe to be at its absolute best in that moment.
What I value most is the careful stewardship of each ingredient. Here, I use a rare hinoki (Japanese cypress) ice chamber, known as a himuro—a traditional method that preserves moisture while gently drawing out the fish’s natural umami, unlike modern refrigeration.
For the rice, I blend three premium Japanese varieties from Toyama, Niigata, and Akita, chosen for their distinct texture and refined flavor. To complete the experience, I curate Champagne, fine wines, and seasonal sake, each selected to harmonize seamlessly with every piece and leave a lasting impression.
Beyond the Kitchen
My passions are golf and fishing. Among sushi, I am especially drawn to hikarimono—silver-skinned fish such as kohada (gizzard shad), which I consider one of the true tests of skill in the art of Edomae sushi.
Design and Ambience
I attune myself to each guest’s pace, so that every piece is served at its precise moment of perfection. This is why I have chosen to limit the counter to just nine seats.
